Papaya-Mango Ice Cream

Ingredients for 1 servings:

  • 150 g papaya (flesh of 1/4 of a large papaya)
  • 150 g mango(s) (pulp)
  • 2 tbsp lime juice
  • 150 g Greek yogurt, 10%
  • 200 g crème fraîche
  • 8 tbsp brown sugar
  • 1 pinch of locust bean gum

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dice the papaya flesh and simmer it in 2 tablespoons of water, puree it, and let it cool. Dice the mango flesh and puree it as well. Blend the fruit purees with lime juice, yogurt, crème fraîche, brown sugar, and locust bean gum and freeze in an ice cream maker for about 30 minutes. Refer to the ice cream maker’s instructions for details.
