Parisian chicken salad

Ingredients for 4 servings:

  • 1 m.-sized chicken or poulard
  • Water
  • 1 m.-sized onion(s)
  • 1 can mushrooms, whole heads
  • 1 tbsp mustard
  • 2 tbsp mayonnaise
  • 1 cube of stock
  • salt and pepper
  • 100 ml white wine or water

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Boil the chicken in water. Then remove the meat from the bones and chop it into small pieces. For the sauce, sauté the finely diced onion in a little oil in a pan, add the mustard, stock cube, and seasoning, and simmer gently. After two minutes, deglaze with the white wine or water and simmer again, then add the mushrooms and let it warm through. Remove the sauce from the heat and stir in the mayonnaise, then add the chicken. Serve while still lukewarm with fresh baguette. It also tastes good cold or as a side dish for a barbecue.
