Parsley chicken

Ingredients for 4 servings:

  • 500 g broccoli
  • 2 garlic cloves
  • 10 tbsp olive oil
  • salt and pepper
  • 4 chicken breast fillets, 150 g each
  • 80 g Parmesan
  • 10 stalks of parsley
  • 1 tsp organic lemon peel, finely grated
  • 3 tbsp lemon juice
  • 2 pinches of cayenne pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Trim the broccoli, peel the stems, and slice thinly. Thinly slice the broccoli florets using a sharp knife. Place the slices on a greased baking sheet. Crush the garlic and toss with 8 tablespoons of olive oil and a little salt and pepper. Sprinkle evenly over the broccoli. Season the chicken breast fillets with salt and pepper and sear on both sides in the remaining oil in a pan. Place the chicken breast fillets on the broccoli. Cook the meat and vegetables in the hot oven on the middle rack for 25 minutes. Finely grate the Parmesan cheese, chop the parsley, mix both, and season with the lemon zest, lemon juice, and cayenne pepper. After 20 minutes, pour the Parmesan mixture over the chicken, press down lightly, and bake for another 5 minutes. Serve immediately.
