Parsley potatoes (new potatoes)

Ingredients for 4 servings:

  • 1 kg potatoes (new, small)
  • 4 tbsp parsley (large-leaf, chopped)
  • 100 g butter
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brush the potatoes clean and boil gently with a pinch of salt for 15 minutes. Then drain and dry. Melt the butter in a large frying pan. Add the potatoes to the pan and let stand over medium-low heat for 15 minutes, or until the underside of the potatoes is crispy and dark brown. Then turn the potatoes over. Sprinkle with the parsley. Toss the potatoes and parsley several times in the hot butter, adding more butter to the pan if necessary. Do not allow to brown any further. Serve with a sausage salad, for example.
