Parsley root pan with peppers

Ingredients for 2 servings:

  • 1 onion(s)
  • 300 g minced beef
  • 500 g parsley root(s)
  • 1 bell pepper(s)
  • oil
  • salt and pepper
  • 2 tbsp ajvar
  • 2 tbsp parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

quick pan dish that doesn’t require a side dish

Peel and finely dice the onion, peel the parsley root and cut into small pieces. Trim the bell pepper and cut it into bite-sized pieces. Heat the oil in a high-sided pan. Fry the onions with the minced meat until crumbly, seasoning with salt and pepper. Then add the parsley root pieces and bell pepper pieces and fry briefly. Pour in a generous splash of water, stir in the ajvar, and simmer with the lid on for about 15 minutes, until the parsley root has the desired bite. Finally, season again with salt and sprinkle in the finely chopped parsley.
