Ingredients for 2 servings:
- 2 bunches of parsley
- 3 m.-large tomato(s)
- 80 g bulgur or Ebly
- 2 tbsp olive oil
- 2 cups vegetable broth
- 1 dash of lemon juice
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Cook the bulgur in the vegetable broth for about 5-10 minutes. Wash and finely chop the parsley. Dice the tomatoes. Combine the chopped parsley, tomato pieces, and the cooked bulgur in a large bowl and mix. Mix with olive oil and lemon juice and season with salt and pepper.
