Ingredients for 2 servings:

  • 350 g parsnip(s)
  • 200 g potatoes
  • 1 tbsp butter
  • some nutmeg, freshly grated
  • possibly salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and rinse the parsnips and potatoes, and cut them into large pieces. Cover with salted water and bring to a boil over medium heat. Cook for 15 to 20 minutes until tender. Drain and let the liquid evaporate in the pan for a few seconds. Remove the pan from the heat. Add the butter and some freshly grated nutmeg. Mash finely with a potato masher. Season with salt, if desired.
