Parsnip puree with apples

Ingredients for 4 servings:

  • 700 g parsnip(s)
  • 2 apples (Boskoop)
  • 60 g butter
  • 1 tsp sugar
  • 1 pinch(s) cardamom powder
  • 1 pinch(s) cinnamon powder
  • 3 tbsp crème fraîche
  • Salt
  • Water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Side dish for roast pork

Peel the parsnips and apples and cut into pieces. Cover the parsnips with water in a saucepan and cook, covered, for about 20 minutes. Drain and let drain. Meanwhile, sauté the apple pieces in melted butter for 10 minutes. Add the sugar, cardamom, and cinnamon, and sauté for another 10 minutes until soft. Purée the parsnips and apples with the crème fraîche in a blender. Add salt to taste and serve immediately.
