Ingredients for 1 servings:

  • 400 g wheat flour, type 550
  • 400 g rye flour, type 1150
  • 80 g yeast
  • ½ liter buttermilk
  • 250 g quark
  • 1 tbsp salt
  • Buttermilk, for brushing
  • poppy
  • sesame
  • fried onions
  • Sunflower seeds
  • Caraway seeds

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

19 small rolls in the shape of a wheel

Make a yeast dough from flour, yeast, buttermilk, curd cheese, and salt and let it prove for about 30 minutes. Line a baking tray with baking paper. Once the dough has risen, knead it well and shape it into rolls. Divide the rolls into 19 equal pieces. With floured hands, shape the pieces into small, round rolls. Place one roll in the middle and arrange the rest in two rows around it in a circle. Brush the wheel with buttermilk and alternately sprinkle with the toppings mentioned above. If you like, you can also knead some of the toppings into the pond beforehand. Cover the wheel and let it prove for 30 minutes. Preheat the oven to 200°C. Then place the wheel in the oven and bake for about 20 minutes. This party bread/party wheel is perfect for a barbecue or as part of a New Year’s Eve buffet. Sprinkle with a little herb butter or simply enjoy it on its own.
