Ingredients for 4 servings:
- 500 g flour
- 1 packet of dry yeast
- 250 ml water, lukewarm
- 1 tbsp, leveled salt
- 5 olives
- 1 tsp harissa
- 1 small bunch of chives
- ¼ package of feta cheese, approx. 50 g
- 1 pinch(s) black pepper
- 1 tbsp olive oil
- 1 egg yolk

Working time approx. 30 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes
A hit at barbecues and parties!
Knead a soft yeast dough with flour, dry yeast, olive oil, salt, and lukewarm water. It will rise wonderfully in a warm oven preheated to 50°C (122°F), then turned off. Let it rise for about 20 minutes with the oven door slightly ajar. Meanwhile, gather the remaining ingredients and chop them up if necessary. Divide the yeast dough into three equal portions. Mix one portion with olives and black pepper, one with harissa (chilli powder and a small tomato also works), one with chives, and the crumbly feta. Form each portion into 6 small balls, for a total of 18. Place the small rolls alternately in a ring-shaped baking dish greased with oil and let them rise for another 20-30 minutes in the lukewarm oven. Then bake at 200°C (400°F) for about 1/2 hour. Before the end of the baking time, remove the party rolls from the pan, brush with egg yolk, and bake for another 10 minutes on the other side.
