Delicious snack: banana pancakes with passion fruit butter

  2. In a pan with oil, sweat the shallots and garlic, add a teaspoon of sugar, and let everything caramelize. Then add 120 grams of black lentils and deglaze with 300 ml of vegetable stock. Everything should now simmer over medium heat for about 20 minutes.

Fry the fish in a pan with a little oil on one side for about three minutes and then add the garlic, rosemary, and 30 grams of butter. Turn the fish carefully to avoid falling apart and season with a little salt. Cover and let the fillets simmer for about 7 minutes over low heat.
  5. Meanwhile, heat some sesame oil in a second pan and briefly fry the pak choi in it at high temperature, then deglaze it with two tablespoons of soy sauce and season with pepper.
  6. Finally, stir 30 grams of butter and the passion fruit pulp into the lentils and season with light balsamic vinegar, salt, and pepper.

Sweet dessert: passion fruit cream

  1. First, mix 400 ml of passion fruit or maracuja juice with four grams of locust bean gum and 120 grams of sugar. Bring everything together in a saucepan to a boil, stirring constantly. Bring to a boil and then place the pot in the fridge to cool for about an hour.
  2. Now halve two passion fruits and scrape out the pulp with the seeds. You can use the shells as decoration later. To do this, cut them into thin wedges.
  3. In the meantime, mix 120 ml of passion fruit or passion fruit juice with two grams of guar gum.
  4. Now add the previously prepared and cooled mass to this passion fruit juice and guar gum mixture and mix everything with a hand mixer for about two to three minutes at the highest level. Gradually add another two grams of locust bean gum.
