Ingredients for 2 servings:

  • 250 g soup vegetables
  • 1 onion(s)
  • 250 g tagliatelle pasta
  • 25 g butter or margarine
  • 125 g cooked ham
  • 200 ml cream
  • 40 g Parmesan, grated
  • some salt and pepper
  • 1 tbsp chives, for garnishing

another way to use soup vegetables

Wash and trim the vegetables (leek, carrot, celery, etc.), and finely dice them. Cook in boiling salted water for 2 minutes, drain, and refresh. Dice 1 onion. Cook the tagliatelle in salted water according to the package instructions. Heat the butter in a pan, sauté the onion, then add the vegetables and sauté for 1 minute. Add the cooked ham and top with the cream. Simmer until creamy, then stir in the Parmesan cheese. Season with salt and pepper. Mix the drained pasta into the sauce and garnish with the chives.
