To cook four portions of Pasta alla Norma, you need the following ingredients:
- For the main ingredient, you need 400 grams of pasta or spaghetti. But you can also use other varieties such as penne as you wish.
- You will also need 600 grams of canned peeled tomatoes and two eggplants.
- Add onion and a clove of garlic and some basil including the stalks.
- Also included are 100 grams of ricotta and plenty of olive oil.
- Finally, all you need is salt and pepper.
Prepare Pasta alla Norma: Here’s how
Below we will show you step-by-step how to cook Pasta alla Norma.
- First, cut the aubergines into slices or cubes. Then put the pieces in a sieve with a little salt and let it drain for half an hour to an hour.
- Meanwhile, you can make tomato sauce. To do this, briefly fry the garlic and basil stalks in a pan with the olive oil and remove it again.
- In the next step, cut the onion into small cubes and also cut the basil leaves and tomatoes into small pieces.
- Then sauté the onion in the same pan, then add the tomato pieces and let it simmer for about 15 minutes.
- Then season the sauce with salt and pepper and the basil pieces.
- Then take another pan and fry the aubergines extensively in olive oil. After frying, drain the fat from the aubergines with paper towels and set aside.
- Then heat water in a saucepan. As soon as it boils, add the pasta with a little salt and let it cook according to the time indicated on the package.
- Then pour off the water and mix the pasta with the aubergine, tomato sauce, and some ricotta.
- Finally, briefly heat the whole thing for another minute. Then arrange the Pasta alla Norma and refine it by crumbling or grating the remaining ricotta.
