Ingredients for 4 servings:
- 250 g pasta
- 200 g mixed vegetables
- 250 g sour cream or creme fraiche
- 125 ml vegetable stock
- 1 tsp mustard
- 1 garlic clove(s), squeezed
- Salt
- pepper
- 125g mozzarella
- 100 g cheese (grated cheese) as desired
- 1 tsp cornstarch

Cook the pasta according to the package directions and set aside. Cut the vegetables into small pieces, boil them in salted water for 7 minutes, and set aside. Whisk together the sour cream, vegetable stock, mustard, garlic, salt, pepper, and cornstarch until creamy. Chop the mozzarella cheese into small pieces. Mix all of the above ingredients in a large bowl and pour into a baking dish. Sprinkle with grated cheese, if desired. Bake in the oven at 200°C (400°F) for about 20 minutes, until the cheese is nicely browned. This dish is easy to prepare and tastes delicious! Of course, you can also complement the casserole with cooked ham or roasted chicken.
