Ingredients for 4 servings:
- 500 g pasta
- 4 m.-large beetroot
- 200 g cream cheese
- 200 g sheep’s cheese
- 200 g cheese, grated
- some salt and pepper
- Garlic
- some beetroot slices, cooked
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
with pink pasta
Coarsely grate the beetroot and cook with the pasta in salted water, draining and reserving some of the pasta water for the casserole sauce. Dice the feta cheese and stir it into the pasta. Mix the cream cheese with the pasta water, salt, and garlic to make a sauce (it will turn a nice pink color). Fold in the pasta and grated beetroot. Transfer to a greased casserole dish. Sprinkle with cheese. Bake in the oven at 200°C for 20 minutes. To serve, cut out small stars or hearts from the cooked beetroot (works well with Spitzbuben cookie cutters) and sprinkle them on top.
