Ingredients for 1 servings:
- 40 g strawberries, fresh or frozen
- 2 eggs
- 1 pinch of salt
- 50 g flour
- 17 g cornstarch
- 1 pinch of baking powder
- 75 g sugar
- 150 g marzipan – cover
- 70 g jam, strawberry
- 150 g powdered sugar
- 1 piece(s) lemon(s), the juice
- 1 tube(s) food coloring, 5 g red
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes
Prepare the strawberries and pass them through a sieve into a bowl. Separate the eggs. Beat the egg whites until stiff peaks. Beat the egg yolks with the sugar and salt until frothy. Mix the flour with the cornstarch and baking powder and sift over the cake, then carefully fold in the beaten egg whites. Grease the bottoms of two 18cm cake tins or line them with baking paper. Divide the batter; I do this by putting one spoonful into the prepared tin, the second spoonful into the bowl with the strawberry puree, and so on. Mix the second batter with the strawberry puree and pour into the second tin and bake for about 20 minutes. Electric oven: 200°C Fan: 180°C Gas mark 3. Remove the cake bases from the tin after 30 minutes and remove the baking paper if necessary. Cut out small hearts from the cake bases using a cookie cutter, tightly spaced. Heat the strawberry jam and also pass it through a sieve. Spread a thin layer of jam over the sponge hearts and assemble a heart from strawberry and a light sponge. Cut out a heart from the marzipan layer and place it on the sponge hearts. Allow it to dry slightly. Sift the icing sugar into a shallow bowl, mix it with the lemon juice, and then stir in the contents of the tube of food coloring. Place a heart in the bowl, pour the icing over the heart using a spoon, use a fork to let the heart drip off a little and place it on a rack lined with baking paper. Continue in this way until all the hearts are icing. Then decorate the hearts with the sugar decorations you provided. Allow it to dry; this can take a few hours. Once the icing has dried completely, cut off any “feet” with a sharp knife.
