Pasta casserole with peas

Ingredients for 2 servings:

  • 250 g penne or other pasta
  • salt water
  • 250 ml cream (soy cream, e.g. Sojacuisine)
  • 200 g peas
  • 100 g smoked tofu
  • ½ m.-sized onion(s), diced
  • ¼ bunch parsley, finely chopped
  • 1 tsp, leveled salt
  • 1 pinch(s) of pepper
  • 1 tbsp oil
  • Cheese, vegan, small crumbs

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

vegan and super delicious

Cook the noodles in salted water according to the package instructions. Thaw or drain the peas. Cut the tofu into small cubes and fry in a little oil (approx. 2-3 minutes). Add the onions and fry for about 1 minute. Add the soy cream and stir quickly. Add the parsley, salt, and pepper. Layer the noodles, peas, and sauce in the casserole dish. Finally, drizzle with more sauce, then top with the cheese. Place in the oven at 220°C (top/bottom heat) until the cheese has melted.
