- 300 g Pasta
- 100 g Chorizo sausage
- 400 g Fresh tomatoes
- 1 piece Onion red
- 2 piece Garlic cloves
- 2 tablespoon Tomato paste
- 100 g Pitted olives
- Olive oil
- Coarse sea salt
- Black pepper from the mill
- Brown sugar
- Prepare the pasta according to the instructions on the packet.
- Roughly dice Chorizo and fry in a little olive oil until crispy and remove from the pan. Fry the finely diced onion and garlic in the hot fat. Add tomato paste later and fry briefly.
- Roughly dice tomatoes and add to the pan, mix and let simmer for about 10 minutes. If it gets too dry, add a little pasta water.
- Season with salt, pepper and sugar and add the chorizo cubes again. Put the drained pasta in the pan and toss. Chop the olives and spread them on top.
- Done – if necessary, sprinkle with freshly grated Parmesan or other hard cheese and let it taste.
