Ingredients for 3 servings:
- 400 g pasta (penne or rigatoni)
- 500 g cherry tomatoes, quartered
- 4 garlic cloves, finely chopped
- 10 tomatoes, dried, finely chopped
- 1 tbsp capers
- 3 tbsp herbs of your choice
- 5 tbsp olive oil
- 300 g mozzarella, diced
- 1 tbsp pine nuts
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cook the pasta until al dente and drain. Combine the tomatoes, garlic, sun-dried tomatoes, drained capers, and herbs, and season with salt and pepper. Mix the pasta and oil together and transfer everything to an ovenproof dish. Sprinkle with diced mozzarella and pine nuts and bake in the hot oven for about 15 minutes.
