Ingredients for 6 servings:

  • 200 g low-fat quark (quark)
  • 70 g sugar
  • 4 eggs, separated
  • some lemon(s), grated peel
  • Orange liqueur
  • vanilla sugar
  • 1 pinch of salt
  • Butter, liquid and sugar for the molds

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

wonderfully fluffy – and without flour

Grease soufflé dishes or similar with melted butter and sprinkle with sugar. Whisk the quark with egg yolk, lemon zest, orange liqueur, and vanilla sugar until smooth. Beat the egg whites with salt and sugar until stiff peaks form. Carefully fold the egg whites into the quark mixture and gently pour everything into the dishes. Bake in a water bath at 190°C (preheated) for 15-20 minutes.
