Pasta in mascarpone cream with chicken breast strips and arugula

Ingredients for 3 servings:

  • 400 g chicken breast fillet(s)
  • 200 g tagliatelle pasta
  • salt water
  • 1 package of vegetables (buttered vegetables, frozen)
  • 100 ml cream
  • 100 ml mascarpone
  • 30 g arugula, cleaned
  • 3 tbsp Parmesan
  • salt and pepper
  • nutmeg
  • possibly broth, granulated

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta according to the package instructions. Cut the meat into strips and brown in a little oil. Add the buttered vegetables, mascarpone, and cream, along with a little pasta water, and simmer for about 5-10 minutes. If the sauce is still a bit too thick, add a little more pasta water and season to taste. Drain the pasta, add it to the cream, and serve. Sprinkle some Parmesan cheese over the cooked pasta and top with the arugula.
