Sardines in oil with tomato dressing

Ingredients for 1 servings:

  • 1 can of skinless, boneless sardines in oil, 125g
  • 1 shallot(s)
  • 1 tomato(s), firm
  • ½ lemon(s), 2 tbsp juice and the grated peel
  • Salt and pepper, from the mill
  • 1 tsp sugar
  • 1 tbsp capers
  • Leaf salad for serving

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Drain the sardines in a sieve, reserving the oil. Peel and finely dice the shallot. Briefly place the tomato in boiling water, then remove from the water, rinse, and peel off the skin. Quarter the tomato and remove the seeds. Finely dice the flesh. Stir the lemon juice with salt, pepper, and sugar until the sugar and salt have dissolved, then add the reserved oil. Whisk until the sauce thickens slightly. Stir the diced tomatoes, shallots, and capers into the dressing. Arrange the sardines in oil on lettuce leaves, drizzle with the dressing, sprinkle with grated lemon zest, and serve. Serve with baguette.
