Ingredients for 4 servings:
- 400 g durum wheat semolina pasta
- salt water
- 1 onion(s)
- 2 tbsp butter
- 200 ml white wine (e.g. Riesling)
- 200 ml vegetable stock
- 100 ml sweet cream
- salt and pepper
- 50 g bacon, diced or 3 tbsp chopped parsley
- 150 g peas from the can
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes
Finely chop the onion and sauté in the butter until translucent. Then add the white wine and vegetable stock and simmer until the sauce has reduced by half. Meanwhile, cook the pasta in salted water. Then add the cream to the sauce and simmer for another 5 minutes. Season with salt and pepper. Add the bacon cubes and peas and heat gently for 5 minutes; do not boil any longer. For a vegetarian option, omit the bacon and add 3 tablespoons of freshly chopped parsley instead. Serve with a mixed green salad. Parmesan or any other grated cheese is not necessary for this dish; in fact, it would actually spoil the flavor.
