Ingredients for 1 servings:
- 750 g apples
- 200 g brown sugar
- 250 g nuts, ground
- 250 g raisins
- 1 tbsp cocoa powder
- ½ pack of gingerbread spice
- 1 cm ginger root, if desired
- 500 g flour, half wholemeal, half wheat
- 1 packet of baking powder
Instructions
Working time approx. 40 minutes; Rest period approx. 2 days; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 days 2 hours 10 minutes
Peel the apples, coarsely grate them, mix them with the brown sugar, and cover and let stand in a cool place overnight. Combine the nuts, raisins, cocoa, gingerbread spice, finely chopped ginger, flour, and baking powder. Add the grated apples and knead well. If too wet, add a little more flour. Grease two loaf pans, fill them with the batter, and bake on the bottom rack of the oven at 180 to 200 degrees Celsius for about 90 minutes. Once cool, wrap the apple bread in foil and let it rest in a cool place for two days. Only then should you slice it.
