Pasta nests with nut sauce

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 tbsp oil
  • 100 ml white wine
  • 400 g tagliatelle
  • 250 g mascarpone
  • 80 g walnuts
  • 200 g carrot(s)
  • salt and pepper
  • Parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Dice the onion and fry in hot oil until translucent. Deglaze with wine and stir in the mascarpone. Roughly chop the nuts and grate the carrots. Add the nuts, carrots, and some chopped parsley to the sauce and bring to a boil briefly. Season with salt and pepper. Meanwhile, cook the pasta according to the package instructions, then drain and twist into nests using a fork. Serve and pour the sauce over the pasta.
