Quick party pasta salad with tomato and mozzarella

Ingredients for 4 servings:

  • 250 g pasta (e.g. penne or similar)
  • Salt
  • 4 tbsp vinegar (red wine vinegar)
  • Pepper, white
  • 60 ml olive oil
  • e.g. basil, fresh (also frozen)
  • 3 m.-large tomato(s)
  • 1 ½ cups mozzarella (small balls, e.g. from Santa Lucia)
  • 35 g pine nuts

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cook the pasta in salted water until al dente, drain well, and let cool. Mix the red wine vinegar with salt and pepper, then whisk in the olive oil. Chop the basil and add to the liquid. Trim and wash the tomatoes, then cut into wedges or cubes. Drain and dice the mozzarella. Mix the pasta, tomatoes, mozzarella, and dressing well and let it marinate for about an hour. Toast the pine nuts in a dry pan until golden brown and add to the salad before serving. Season again with salt and pepper before serving. Tip: If you like, you can also garnish the salad with whole basil leaves.
