Pasta salad with arugula

Ingredients for 6 servings:

  • 2 bunches of arugula
  • 250 g cherry tomatoes
  • 200 g olives, black, preferably without stones
  • 1 garlic clove(s)
  • 500 g pasta (shell pasta or other small pasta)
  • 10 tbsp olive oil
  • 5 tbsp balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the arugula, spin dry, and chop finely, removing the stems. Wash and quarter the tomatoes. Chop or thinly slice the olives, and peel the garlic clove. Cook the pasta until al dente and drain. Mix together the olive oil and balsamic vinegar, add the garlic, and season with salt and pepper. Mix all ingredients, season again, and let it marinate. The salad is also delicious served warm!
