Pasta salad with arugula and dried tomatoes

Ingredients for 4 servings:

  • 350 g pasta
  • Water (salt water)
  • 1 jar of dried tomatoes marinated in garlic oil (approx. 300g)
  • 1 package of arugula
  • some pine nuts
  • some Parmesan
  • salt and pepper
  • possibly chili
  • possibly garlic

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta in salted water according to the package instructions until al dente, drain, and rinse with cold water. Drain the tomatoes in a colander (reserving the oil), chop them, and briefly fry them in a pan. Then briefly toast the pine nuts. Wash and chop the arugula. Finally, mix everything together, drizzle with a little of the tomato oil, then grate fresh Parmesan cheese over it and fold it in. Season to taste with salt, pepper, chili, and garlic. Delicious fresh or prepared!
