Pasta salad with balsamic vinegar and paprika

Ingredients for 2 servings:

  • 2 large tomatoes
  • 1 large bell pepper(s)
  • ½ bunch basil
  • 2 large gherkins
  • 100 ml balsamic vinegar
  • 1 dashes oil
  • 300 g farfalle or penne
  • 1 pinch(s) of salt and pepper
  • e.g. tomato paste mixed with water
  • 1 m.-large onion(s), red

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

vegetarian / vegan

Cook the pasta according to the package instructions. Cut the peppers, tomatoes, onions, and cucumbers into small pieces. Pick the basil and chop it as well. Place the cooked pasta in a large bowl with the vegetables and basil and season with salt. Drizzle the balsamic vinegar and oil over the salad. If desired, mix a little tomato paste with water to make a sauce and drizzle it over the salad. Either eat it warm or let it sit for a few hours.
