Pasta salad with feta cheese and arugula

Ingredients for 4 servings:

  • 350 g pasta, mini penne
  • ½ pack of feta cheese
  • ½ pack of arugula, approx. 150-200 g, depending on taste
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • Salt
  • pepper
  • Sugar
  • 2 tbsp olive oil, or wild garlic oil
  • 1 tsp butter

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

ideal for grilling

Cook the pasta as usual, rinse well, and immediately toss in a bowl with 1 tablespoon of oil to prevent it from sticking together. Finely dice the onion and sauté in the butter, season with salt and pepper, then sprinkle 1 tablespoon of sugar over the onion and let the sugar caramelize. Remove from the pan and let cool. Cut the feta cheese into small cubes. Trim the arugula and tear or chop it into small pieces. Finely chop or press the garlic cloves. Add everything to the slightly cooled pasta and mix well. Then season with salt, pepper, and a little sugar. Add a little more oil if desired. Tastes great grilled or with meatballs.
