Ingredients for 2 servings:
- 1 bowl of sugar snap peas, approx. 200 – 250 g
- 1 bowl of cherry tomatoes, approx. 200 – 250 g
- 1 handful of cashew nuts
- 250 g spaghetti or other pasta
- 1 garlic clove(s)
- 1 m.-large onion(s), red
- salt and pepper
- Paprika powder
- some oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Very fresh, light and vegetarian!
Heat oil in a pan and prepare a pot of water for the pasta. Peel and finely chop the onion, and halve the snow peas and tomatoes. First, sauté the onion in a pan. Peel the garlic and add it to the onions, either finely chopped or using a garlic press. After briefly sautéing, add the snow peas to the pan. Heat the water for the pasta on the stove. When the water boils, add salt and the spaghetti (or your chosen pasta) and cook until al dente. Meanwhile, add the halved tomatoes to the pan and season to taste. Add the cashew nuts. Drain the cooked pasta, but do not rinse it and reserve a little of the pasta water. Add some of the pasta water to the vegetables. Plate the pasta, top with the tomato, snow pea, and cashew mixture, and enjoy!
