Soy strips with hummus sauce

Ingredients for 3 servings:

  • 250 g pasta
  • ½ cup hummus, spicy, approx. 100 g
  • 1 tbsp, heaped vegetable stock powder
  • 1 onion(s)
  • 1 handful of spinach
  • 1 ½ handfuls of soy mince
  • Oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook the noodles according to the instructions. Soak the soy strips in boiling water with the vegetable stock powder for about 5 minutes. Then drain, reserving about 200 ml of the vegetable stock. Squeeze out the soy strips. Then fry them in a little oil until crispy and then remove from the pan. Dice the onions and fry them in a little oil until translucent. Deglaze with the reserved vegetable stock. Add the hummus and stir in, then bring to a boil briefly. Now stir in the fried soy strips, spinach, and noodles until the spinach wilts slightly. Tip: Optionally, you can add some nutritional yeast.
