Working time approx. 20 minutes; Total time approx. 20 minutes

the crunchiest and tastiest cookies I’ve ever baked

Preheat the oven to 180°C (160°C fan/convection oven) and line two baking sheets with baking paper. First, chop the chocolate into small pieces. In a bowl, cream the softened butter with the sugar and vanilla sugar until fluffy. Add the egg, flour and baking powder and quickly mix in. Finally, add the chocolate chips and nuts and mix everything together. Use a teaspoon to scoop out small heaps of dough and place them on the baking paper, leaving some space between them. Flatten slightly so the cookies cook evenly. Bake for 12-15 minutes. Makes about 40 cookies. If you like, you can refine the cookies with about 25g of finely chopped, candied ginger or decorate them with dark chocolate coating.
