Pasta with arugula, tomatoes and pine nuts

Ingredients for 1 servings:

  • 140 noodles
  • 6 cocktail tomatoes
  • 14 g pine nuts
  • 10 arugula leaves
  • salt and pepper
  • 5 g olive oil
  • 10 g Parmesan
  • 1 pinch of sambal oelek
  • ½ garlic clove(s)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cook the pasta. Quarter the tomatoes, trim the arugula, and grate the Parmesan cheese. Toast the pine nuts in a pan until golden brown. Add the cooked pasta to the pan with the olive oil and garlic, then add the tomatoes and all the seasonings. Heat briefly and mix. Serve the hot pasta on a plate, sprinkle with the Parmesan cheese, and then scatter the arugula and pine nuts on top. Total: 11 FP.
