Ingredients for 4 servings:
- 500 g tagliatelle pasta
- 1 tbsp oil
- 100 g Parmesan
- 400 ml cream
- 2 egg yolks
- 25 g truffles, black
- Salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Cook the pasta in plenty of salted water with the oil according to the package instructions until al dente. Drain and set aside in a colander. While the pasta is cooking, coarsely grate the Parmesan cheese. Place the cream in a saucepan and reduce by half. Whisk the egg yolk with 3 tablespoons of hot cream. Then add it to the cream, do not allow it to boil, and stir until a light, creamy sauce forms. Season with salt. Layer the pasta with the Parmesan cheese and cream sauce in a warmed bowl. Grate the truffle over the top, fold in well, and serve immediately.
