Ingredients for 2 servings:
- 250 g pasta
- 1 kohlrabi
- 100 ml vegetable stock
- 2 tbsp almond butter
- 2 tsp mustard
- smoked salt
- 2 tsp nutritional yeast
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Cook the pasta according to the package instructions. Peel the kohlrabi, setting aside the tender leaves. Grate the kohlrabi into fine strips. Briefly fry the grated kohlrabi in a pan and deglaze with the vegetable stock. Add the almond butter, mustard, and salt, or other seasonings to taste, mix well, and simmer for about 5 minutes at low heat. Meanwhile, finely chop the tender kohlrabi leaves. Drain the pasta and mix with the kohlrabi. Add the nutritional yeast and chopped kohlrabi leaves and mix well.
