Pasta with mint crème fraîche sauce

Ingredients for 6 servings:

  • 20 slices of bacon
  • 1 bunch of mint
  • 1 lemon(s)
  • 2 tbsp crème fraîche
  • 25 g butter
  • 500 g pasta
  • 400 g peas, freshly shelled or frozen
  • 130 g Parmesan, freshly grated
  • olive oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Add the pasta to the boiling water with a little sea salt and cook until al dente, then drain well (save the water; you’ll need some of it later!). Chop the mint leaves and set aside. Cut the bacon into small cubes and add to a large, deep pan with 3 tablespoons of olive oil. Fry over high heat for 4 minutes. When the bacon is golden brown, add the peas and pasta to the pan. Stir in the crème fraîche and a little lemon zest, along with the juice of half a lemon. Mix in the Parmesan cheese and mint. Finally, add about a glass of the pasta water, bring to a boil, toss everything well, and serve immediately.
