Ingredients for 2 servings:
- 3 tomatoes, Italian or Spanish
- 100g bacon
- 30 g capers
- 1 garlic clove(s)
- 4 tbsp olive oil
- salt and pepper
- 1 tsp sugar
- 300g spaghetti
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Cook the spaghetti in plenty of salted water until al dente. Heat the olive oil in a large pan (not too hot!), add the bacon, cut into 1-2 cm wide strips, and cook until golden brown, without browning. Add the sliced garlic, capers, and roughly chopped tomatoes. Add sugar to taste. Season with salt and pepper. Sauté over low heat for 2-3 minutes. Add the spaghetti while still dripping wet. Add a little more cooking water if needed. Heat again and enjoy. Serve with a glass of Bardolino or Valpolicella.
