Spaghetti all'amatriciana

Ingredients for 2 servings:

  • 3 tomatoes, Italian or Spanish
  • 100g bacon
  • 30 g capers
  • 1 garlic clove(s)
  • 4 tbsp olive oil
  • salt and pepper
  • 1 tsp sugar
  • 300g spaghetti

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the spaghetti in plenty of salted water until al dente. Heat the olive oil in a large pan (not too hot!), add the bacon, cut into 1-2 cm wide strips, and cook until golden brown, without browning. Add the sliced ​​garlic, capers, and roughly chopped tomatoes. Add sugar to taste. Season with salt and pepper. Sauté over low heat for 2-3 minutes. Add the spaghetti while still dripping wet. Add a little more cooking water if needed. Heat again and enjoy. Serve with a glass of Bardolino or Valpolicella.
