Pasta with pine nuts and parsley

Ingredients for 2 servings:

  • 400g pasta
  • 50 g pine nuts
  • 1 bunch of parsley
  • 75 g Pecorino
  • 1 lemon(s)
  • 1 buffalo mozzarella
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Toast the pine nuts in a pan and then finely chop them along with the parsley. Mix with the squeezed lemon and a little pasta water, and season with salt and pepper. Grate the pecorino and cut the buffalo mozzarella into small cubes. Cook the pasta in salted water according to the package instructions. Drain the hot pasta and toss it with the pesto and grated pecorino. Season again with salt and pepper. Finally, add the buffalo mozzarella.
