Spaghetti Calabrese

Ingredients for 2 servings:

  • 250g spaghetti
  • 250 g cocktail tomatoes
  • 2 cloves garlic (finely chopped)
  • 1 pepper (finely chopped)
  • ½ bunch basil (cut into fine strips)
  • 2 tbsp olive oil
  • some sea salt
  • some pepper, freshly ground black
  • Sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Put the pasta water on the boil, halve the tomatoes, and fry them in oil with the garlic. Add a little of the cooking water, mash the tomatoes lightly with a fork, and add the peppers. Meanwhile, cook the pasta. Season the sauce with salt and pepper (a pinch of sugar certainly doesn’t hurt). Add the basil and immediately add the pasta from the cooking water. Toss well. Done! If you like, you can add some pitted and halved black olives and/or grate some fresh Parmesan cheese over the top. Add a piece of bread to mop up any leftover sauce and it really completes the dish.
