Pasta with smoked salmon

Ingredients for 4 servings:

  • 500 g tagliatelle, thin
  • salt and pepper
  • 1 onion(s)
  • 200 g smoked salmon, sliced
  • 1 lemon(s), untreated
  • ½ bunch chives
  • 1 tbsp butter
  • 200 g whipped cream
  • 200 ml vegetable stock

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta in salted water according to the package instructions until al dente. Meanwhile, peel and finely dice the onion. Cut the salmon into thin strips. Wash the lemon in hot water, dry it, zest it, and squeeze out the juice. Rinse the chives and shake them dry, trim a few longer stalks for decoration, and finely chop the rest. Heat the butter in a large pan and fry the onions until translucent. Add the cream, stock, and lemon zest; bring to a boil, then simmer over low heat for 5 minutes. Drain the pasta, let it drain, and immediately stir it into the cream sauce. Stir in the chives and salmon, season with salt, pepper, and lemon juice. Garnish with the chives and serve.
