Pasta with spinach pesto

Ingredients for 2 servings:

  • 250g spaghetti
  • 15 g basil leaves
  • 8 small tomatoes
  • 2 cloves garlic
  • 2 tbsp oil
  • 2 tbsp cream cheese
  • 15 g Parmesan
  • 80 g fresh leaf spinach
  • salt and pepper
  • 25 g pine nuts

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook spaghetti in a pot of salted water according to the package instructions. Pick the basil leaves from the stems. Halve the tomatoes. Peel the garlic. Combine 2 tablespoons of oil, 2 tablespoons of cream cheese, the Parmesan cheese, spinach, garlic, and basil in a blender and blend until smooth. Season with salt and pepper. Toast the pine nuts in a pan without oil. Place the pasta in a colander, drain briefly, and then return it to the pot. Stir in the pesto, pine nuts, and tomatoes and serve immediately.
