Pea soup with mint and sausages

Ingredients for 2 servings:

  • 400 g peas, frozen
  • 100 ml cream
  • 2 potatoes
  • 500 ml broth
  • 1 bunch of mint
  • 4 Vienna sausages
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Prepare the hot broth in a saucepan. Peel and dice the potatoes, and add them with the peas. Simmer for about 20 minutes. Remove the pan from the heat and puree everything. Meanwhile, add the cream. Season with 1 teaspoon of salt and 1/2 teaspoon of pepper and stir well. Cut the sausages into small pieces and add them to the soup. Let them steep for 1 minute. Finely chop the mint. Serve the soup and sprinkle with mint.
