Pasta with Sugo Arrabbiata à la Didi

Ingredients for 2 servings:

  • 200 g pasta shells
  • 500 ml tomatoes, pureed
  • 2 tbsp tomato paste
  • 2 tsp onion granules
  • 1 tsp garlic salt
  • 1 chili pepper(s) (Rawit Red), dried
  • 1 tsp sugar
  • 1 tsp oregano, shredded
  • 2 tbsp olive oil
  • 1 shot of dry white wine (Riesling)
  • e.g. Parmesan, freshly grated

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Place the passata in a saucepan and add the tomato paste, onion granules, and garlic salt. Finely chop the chili pepper and add it. Stir in the sugar, oregano, olive oil, and white wine. Mix everything together and simmer for 15 minutes, stirring frequently. Meanwhile, cook the pasta according to the package instructions. Drain, stir into the sauce, and heat through. Plate up, sprinkle with Parmesan cheese, and serve.
