Pasta with tuna, tomato sauce and arugula

Ingredients for 4 servings:

  • 500 g pasta (e.g. macaroni)
  • 2 large onions
  • 1 can/n tomato(s) (Pizza tomatoes)
  • 1 pack of tomatoes, pureed
  • 2 cans of tuna, natural, drained
  • 3 tbsp tomato paste
  • 2 tbsp sugar
  • some vegetable broth
  • oregano
  • ½ bunch arugula
  • Salt
  • pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the arugula and cut it into small pieces. Cook the pasta in plenty of salted water according to the package instructions until al dente. Meanwhile, peel the onions, quarter them, and slice them into thin strips. Heat the olive oil in a large pot and sauté the onions with the sugar. Add the pizza tomatoes, passata, and tomato paste. Season with spices and oregano. Add the drained tuna and break it up a little. Simmer for about 5 minutes. You can now either mix the drained pasta with the sauce straight away or pour the tuna sauce over the pasta at the table. Serve with the arugula and drizzle fresh over the pasta dish. Tip: Grate some fresh Parmesan cheese over the top, if desired.
