Pasta with vegetable sauce

Ingredients for 2 servings:

  • 300g fusilli
  • 1 large carrot(s)
  • 1 bell pepper(s), red
  • ½ zucchini
  • 1 large onion(s)
  • Garlic
  • 1 can tomatoes, chopped, approx. 400 g
  • basil
  • oregano
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Bring the pasta water to a boil. Cook the pasta al dente according to the package instructions and drain. Meanwhile, dice the vegetables. Sauté the onion in a pan. Add the remaining vegetables and cook for a few minutes. Pour the chopped tomatoes over the vegetables and simmer for a few minutes. Season with fresh garlic, basil, oregano, salt, and pepper. Add the cooked pasta to the sauce, mix briefly, and serve.
