Pasta with zucchini and salmon

Ingredients for 4 servings:

  • 500 g pasta (butterfly pasta)
  • 1 zucchini
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 300 g salmon
  • 200 ml cream
  • olive oil
  • salt and pepper

Cook the butterfly pasta in plenty of salted water according to the package instructions. Wash the zucchini and cut into bite-sized cubes. Peel and finely dice the onion and garlic. Sauté the zucchini in a pan with a little olive oil for about 3 minutes. Then add the onion and garlic and continue to sauté for about 1 minute. While the vegetables are sautéing in the pan, steam the salmon in a steamer at 100°C for about 8-10 minutes. Alternatively, you can of course also do this in a Thermomix steamer attachment or using a steamer insert for a saucepan. Then deglaze the zucchini with the cream and let it simmer briefly. Season the sauce with salt and pepper. Add the roughly chopped butterfly pasta and salmon to the pan, fold in, and serve.
