Pasta with salmon and zucchini sauce

Ingredients for 4 servings:

  • 2 tbsp oil, neutral
  • 2 garlic cloves, finely chopped
  • 2 onions, diced
  • 2 small zucchini
  • 400 g salmon fillet(s), cut into smaller cubes
  • 4 tomatoes, peeled and diced
  • 400 ml fish stock
  • 200 ml cream or Cremefine
  • 1 bunch of dill
  • salt and pepper
  • lemon juice
  • 500 g spaghetti or other pasta of your choice

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

quick and delicious

Cook spaghetti according to the package instructions. Heat oil in a deep pan. Sauté finely chopped onion and garlic until translucent. Dice zucchini and add. Briefly sauté salmon and tomato cubes. Remove vegetables and fish from the pan and set aside. Pour fish stock and cream into the pan and simmer until thickened. Season with salt, pepper, and lemon juice. Return the contents of the pan to the pan and heat gently. Stir in finely chopped dill and serve with the cooked spaghetti.
