Ingredients for 1 servings:

  • 1 large organic lemon(s)
  • 100 g sugar
  • 100 g honey
  • 200 g sesame seeds, light

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Greek sesame brittle

Wash the organic lemon with hot water, dry it, and grate the zest. Squeeze out the juice and add it to a saucepan with the sugar. Roast the sesame seeds in a dry pan until light brown, transfer to a metal bowl to cool, and mix in the lemon zest. Cook the sugar and lemon juice over medium heat until the lemon juice has evaporated and the sugar turns a light brown color. Stir continuously with a wooden spoon. Mix in the honey and continue to caramelize, stirring constantly (about 3-4 minutes). Now add the sesame seeds and mix everything well. Line a baking sheet with baking paper and spread the sesame caramel on it to a thickness of 3-5 mm. Let it cool slightly and then cut into pieces with a large, cold knife. Then let the pieces cool completely until they harden slightly. Stack the cold brittle pieces in a tin, placing a sheet of baking paper between each layer. Seal the tin and store in a cool place.
