Turkish pizza wraps

Ingredients for 18 servings:

  • 18 wraps
  • 500 g minced beef
  • 200 g pepper, green (e.g. variety Sivri)
  • 2 large onions
  • 2 garlic cloves, more if desired
  • ½ bunch parsley
  • 6 tomatoes
  • 3 tbsp paprika paste, mild
  • 1 tbsp tomato paste
  • 1 tsp, leveled cumin
  • ½ tsp sumac
  • e.g. salt and pepper
  • e.g. Pul Biber, Sambal Oelek, or spiciness as desired
  • Margarine for frying

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Halve the peppers lengthwise, remove the seeds, and cut into small cubes. Peel the onions and also cut into small cubes. Peel and finely chop the garlic cloves, add a little salt, and mash with a fork to make a garlic paste. Combine the peppers, onions, and garlic paste in a bowl. Rinse the parsley, shake dry, and chop. Rinse the tomatoes, trim the stems, cut into small cubes with a knife, and add to a bowl with their juices. Brown the ground beef without adding any oil, preferably in a non-stick pan, and season immediately with salt and pepper. Add the diced peppers, onions, and garlic, and sauté the vegetables until translucent. Then add the bell pepper and tomato paste and sauté for about a minute. Add the tomatoes and parsley and season everything with cumin and sumac (Tip: If you like it spicier, you can add pul biber, sambal oelek, or another hot sauce to taste). Let the minced meat and vegetable sauce simmer for about 5 minutes over medium heat and season again with salt and pepper. In another non-stick pan, heat a little margarine over low to medium heat and let one wrap lightly brown. Then turn the wrap over and spread a heaped tablespoon of the warm minced meat and vegetable sauce thinly over it. As soon as the underside of the wrap is also lightly browned, remove it from the pan and roll it up immediately. Prepare the remaining wraps in the same way and warm them briefly in the pan with a little margarine before serving. Alternatively, you can bake the wraps coated with the minced meat and vegetable sauce for 10 minutes in a preheated oven at approx. 180°C (top/bottom heat). Tip: I divided the minced meat topping into 3 portions, each for 6 pizza wraps, and froze the remaining 2 portions. When needed, you can then thaw them, heat them briefly, and then use them to make the wraps.
